Happy Herbivore cookbook has amazing low-fat healthy recipes for everyone to enjoy. One of my faves is The Cheater Pad Thai recipe. It's so easy to make and has all the delicious flavors that you love in pad thai without out the greasiness and fat that can weigh you down. My hubby loves the creamy texture that the peanut butter adds to the dish. I chopped up some broccoli and carrots to balance the dish with some veggies.
