I have this big bag of potatoes sitting in my kitchen. I'm trying to get creative with what to do with them, so keep a look out for more potato posts. I had this delicious stuffed potato the other night. I loaded it with some veggies and fresh avocado. Mmm...Take a look!

I baked my potato at 475 degrees for about an hour.
I got my box of veggies from csa last week and I was happy to find some zucchini inside. Zucchini is so yummy roasted but I also love to fry it. Here's a recipe of my fried crispy fried zucchini:
Fried Zucchini
Zucchini
Almond Milk (Any non dairy milk will do)
Corn Meal
Oil for frying
Take your zucchini and chop it up into strips. Place some of the chopped zucchini into your milk and mix around until they're all covered. Transfer the zucchini into corn meal and coat the them well with the corn meal. Fry in pan until golden brown. Eat!
I had gone through many trials and error with trying to make my rice come out just right, when finally I gave up and made a plan to buy a rice cooker. Luckily, we were shooting a film at the time which required a rice maker, so the timing worked out perfectly. I went on Amazon and looked around until I found the perfect rice making machine. The one I bought is fantastic because not only does it cook rice but it also steams vegetables. So, you can make your rice and veggie goodies at the same time or separately if you prefer.
A few weeks ago I found fresh green beans in my CSA box along with some crookneck squash. I sauteed the veggies for a delicious side dish to pair with some Match Meat chicken.
Green Bean Sauté
Ingredients
Fresh green beans
Crookneck squash
A handful of peanuts
Olive oil
Lemon juice
Parsley
Directions
Heat your pan to medium with some olive oil. Add green beans and crookneck squash and begin to sauté. Stir occasionally until the vegetables are almost done and splash with some lemon juice. Add peanuts (I used salted peanuts so I wouldn't need to add other salt to the dish). Keep stirring until they are ready and then sprinkle with some parsley.
