Healthy Vegan & Gluten Free Pizza

Hey guys! I have a delicious pizza recipe for you and it's completely gluten free. I got the recipe from Damy Health. It's a cauliflower pizza crust, using just a few simple ingredients. Amy, the owner of the site, makes wonderful clean and healthy recipes, and most of them are vegan and gluten free. The original recipe isn't vegan, but you know that has never stopped me from making a dish. So, I made some tweaks. To make it vegan I used 1/4 cup of ground flax seed and 2-3 tablespoons of water instead of eggs. I used daiya cheese instead of mozzarella cheese to mix in with the crust and I used teese cheese on top of the pizza.

This is definitely a yummy dish. I was surprised at how well the cauliflower turned out. I will have to make some more tweaks though. Next time I'll bake the crust without the daiya cheese. It took too long to melt, so the crust came out gooeyer than I wanted and I think I'll shred the teese cheese instead of slicing pieces. But, overall I really enjoyed this pizza and I will be making this again soon! Give it a try and let me know what you think.

Fabulous Potato Mash!

Who likes potatoes??? I love them! Can't get enough...yum yum yum. Baked potato, mashed potatoes, my fabulous potato mash, french fries (I sound like the guy from Forest Gump).lol But anyway, over the weekend my friend and I were hanging out at my place chatting and having a good time. I suddenly became quite famished and had to fix the problem before I started eating my arm. I looked in my fridge, grabbed a few things, cut up some potatoes, threw everything together in a pan, and came up with this tasty potato mash.

I, of course, added hot sauce to mine. 




I'm not sure if this would be called a recipe...more like stuff in my fridge that I thought would taste good together.

Potato Mash


Ingredients 

  • Potatoes (I used two large ones)
  • 6 cloves of garlic chopped
  • A handful of fresh parsley
  • A handful of green onions chopped
  • Half of a red onion chopped
  • Juice of a lime
  • Olive oil
  • A little vegan butter (add to taste)

Heat up some olive oil in a pan and add all the ingredients except for the potatoes and the butter. Saute the veggies for about a minute and then add the potatoes (I boiled mine first for a few minutes cuz I like them soft) and the butter. Stir everything together and cook until the potatoes are completely done...you can cook them longer if you want them to be crispy.

Healthy Ramen!

I love a bowl full of soup! There's nothing more comforting and warming than soup...yum yum yum. After visiting Shojin and tasting their delicious spicy miso ramen, I tried making different variations of my own. Ramen is very yummy but not always the healthiest noodle for soup, so I decided to make a better for you ramen soup. Please enjoy!

Ingredients:

1 1/2 Veggie Bouillon Cubes (I use the low sodium kind)
Brown Rice Noodles (Add as much as you like)
4-5 quarts of water for noodles
3 Cups of Water for soup
A few dashes of Garlic Powder
Pepper
Parsley
Some Kale (Optional)
A teaspoon of brown Rice Miso (Optional)


Directions

Bring 4-5 quarts water to a boil. Add noodles and boil 2-4 minutes or until tender, stirring occasionally. Drain and rinse under cold water (optional). Set noodles aside for now. Bring 3 cups water to a boil. Add veggie bouillon cubes and stir until they dissolve. Bring heat to medium and add garlic powder, pepper, and parsley. Simmer for a few minutes then add brown rice noodles and kale (optional). Let simmer a few more minutes and then enjoy...If you're adding miso to your soup, take about a teaspoon of miso and put it in a bowl, add some of the broth from the soup to the miso and stir until it dissolves, then add the miso mixture into the pot with the rest of the soup and stir for about a minute. Done!


I added kale to mine. Yum!
