Deliciously Stuffed Oyster Mushrooms & Fall Recipe Collaboration!
Hey Guys! I have a special treat for you guys today! I’m
partnering up with some friends to bring you all the perfect fall video recipes. So,
for my recipe, I’ll be making a Deliciously Stuffed Oyster Mushroom. Now, if you think that sounds good, check out what my friends will be making: Clam Free Chowder, and Pumpkin Pie Latte. Yum! Check out my video below to get the other recipes! :-)
Deliciously Stuffed Oyster Mushrooms
You will need:
½(10-ounce) package of frozen chopped spinach
12 large, fresh mushrooms
1 to 2 (8-ounce) containers of oyster mushrooms
1 (14-ounce) container of shiitake mushrooms (optional)
½ - 1 cup finely chopped onion
Parsley (optional)
Basil (optional)
½ cup of bread crumbs
½ cup vegan parmesan cheese
Prepare spinach according to package directions; drain and
pat dry with paper towels. Set aside.
Remove stems from mushrooms, discarding stems.
Add 12 mushrooms to skillet over medium heat and sauté 4
minutes or until barely tender. Remove from skillet, and place cap-side up in your baking sheet.
Add onion, shiitake, and oyster mushrooms to your cooking
pan and sauté 3 to 4 minutes or until tender. Remove from heat. Stir in
reserved spinach, bread crumbs, 1/3 cup vegan cheese, and seasonings. Spoon
mixture evenly into mushroom caps; sprinkle with remaining vegan cheese.
Bake at 350° for 15- 20 minutes or until thoroughly heated.

Chick'n Pasta Delight!
Hey Guys! A little while back I made this really yummy chick'n pasta dish that was just too delicious not to share with you. So, I hope you enjoy the recipe and share it with a special someone...but, only if they're nice. ;-)
Chick'n Pasta Delight!
Ingredients
*2 Gardein Meatless Breaded Cutlets
*1 Package of Brown Rice Pasta (Or any other Gluten Free Pasta)
*1 Cup of Cherry Tomatoes
*1 Jar of Pasta Sauce (I used Trader Joe's Organic/Low Sodium)
*1 Handful of Spinach
*A few dashes of Nutritional Yeast (Optional)
*A few dashes of Vegan Parmesan Cheese (Optional)
Start your preparation by boiling your pasta water. While you're waiting for your water, you can get your chick'n cutlets ready. Prepare your breaded cutlets according to the package. With your chick'n in the oven, your pasta should now be ready to boil. So put it in the pot and let it do its thing. Pour your pasta sauce into a medium size pot. Cook your sauce on medium heat until it bubbles, then let it simmer until ready to serve. Rinse off your spinach and cherry tomatoes. Cut your tomatoes in half and set aside while you wait for your pasta. Once your breaded cutlets are done, take them out of the oven and cut your chick'n into strips. Drain your pasta, but make sure to save a little of the water. Transfer your pasta into a big bowl, add a little of the pasta water into the bowl, along with your chick'n, pasta sauce, spinach, and tomatoes. Stir until everything is mixed well and then place your desired portion onto your welcoming plate. Add a few dashes of nutritional yeast and vegan parmesan on top!

Hey Guys!
The month of September has kicked off with the Vegan MoFo (Vegan Month of Food). Which means hundreds (maybe thousands) of vegan bloggers will be posting new cool vegan info with you throughout the month. I'm starting a bit late...can you tell?lol I've just been so busy with a few other things that the first few days of this month kind of flew by me. So, getting back on track...here is day 1 of my Vegan MoFo posts!

Getting Fit Vegan! Day 1!
Getting Fit Vegan! Day 1 "Vegan, What?"
Hey Guys! I'm trying to get myself back into shape. I let myself go overboard during the Holidays and it's been hard getting back on track ever since. Well, I've had enough and I want to get my body back! So, I'll be consistently exercising, eating as healthy as possible, and sharing my journey with you along the way.
If you're trying to get back on track then I hope these videos encourage you. If you're already doing everything right and looking the best ever, then please come and encourage me!lol :-)
I will do my best to post Monday through Friday. I might be posting this way for a month or maybe more, I guess we'll just have to see how this goes.
