Vegan Halloween Event!!

Hey Peeps! Hope you guys enjoyed your weekend. I had the pleasure of attending a Vegan Halloween Event at Verdugo bar, hosted by Chica Vegan. There were costumes, raffle prizes, and best of all delicious vegan food. I tried a few things here and there and took the rest of goodie stash home. The food was amazing and I was stuffed to capacity before I got the chance to finish my meal. Kale Hemp Flatbread

A few weeks ago I dove into my Urban Food Crawl Goodie bag and picked out another treat to explore. This time I tried a kale snack from Twin Cakes Bakery. They have a kale hemp flatbread that's pretty tasty. It has some good flavors with a nice little touch of spice. I also like the crunch. I haven't tried too many kale snacks, at least not any packaged ones. I usually just eat fresh kale from home. I would eventually like to try some kale chips...if only they weren't so expensive. I guess I'll just have to make my own. If you like kale snacks, which I'm sure you do, you should check this one out.

Stuffed Potato!

I have this big bag of potatoes sitting in my kitchen. I'm trying to get creative with what to do with them, so keep a look out for more potato posts. I had this delicious stuffed potato the other night. I loaded it with some veggies and fresh avocado. Mmm...Take a look!

Potato stuffed with red onions, tomatoes, black beans, and avocado. 

Added a side of quinoa and cabbage. 
I baked my potato at 475 degrees for about an hour.

Fried Zucchini!

I got my box of veggies from csa last week and I was happy to find some zucchini inside. Zucchini is so yummy roasted but I also love to fry it. Here's a recipe of my fried crispy fried zucchini:

Fried Zucchini 

Zucchini 
Almond Milk (Any non dairy milk will do)
Corn Meal 
Oil for frying 

Take your zucchini and chop it up into strips. Place some of the chopped zucchini into your milk and mix around until they're all covered. Transfer the zucchini into corn meal and coat the them well with the corn meal. Fry in pan until golden brown. Eat!

The Veggie Grill

I've wanted to check out Veggie Grill for a while. The food looks fresh and yummy, they have locations all over, it's a little pricey, but that doesn't bother me as much when I'm really craving some good vegan food. So, last month my sister-in-law and I found a location close by and decided to go. Ironically, she's not a vegan but loves veggie grill and has been a few times, so I was excited to go with someone who already tried the food. I ordered their carne asada sandwich with a side of chili and we shared some buffalo wings. OMG it was so delicious!!! Restaurants like Veggie Grill are so amazing in the way that they make you forget that you're eating meat substitutes. I think if more non vegans checked out places like this they would realize that vegan meat can taste so much better than the real thing. Check out my video and some pics below:




Carne Asada: Grilled veggie-steak, marinated in Mexican spices, with southwestern spiced vegan mayo, red onion, lettuce, tomato on a wheat roll. $8.95

Buffalo wings with a side of celery and ranch. 


Chipotle BBQ: Shredded veggie-steak, marinated in our tangy BBQ sauce, with chipotle ranch, caramelized onion, lettuce, tomato. $8.50  And a side of sweet potato fries. $2.25

Breakfast Potatoes

I'm not really a morning person but I'm definitely a breakfast person. I love all things breakfast and sometimes I even have breakfast for dinner. Yum! This morning I cooked up some potatoes with some scrumptious veggies. Look at the beautiful colors in the pan. Don't you just love home fries?? :-)

Potatoes with kale, peppers, garlic, tomatoes, mushrooms, green onions, a little parsley, and red onions.

Quick and Tasty Pasta!

I'm excited to have my friend visiting from New York, so I've been busy today getting her to try some vegan goodness. But, I had to make sure to throw in a quick post. I made some delicious pasta last week and I just couldn't wait to share it with you. I haven't had pasta in a while for some reason. I love it in any form, whether it's spaghetti, lasagna, etc. but it was so good to have a warm plate of saucy yummyness.

Quick and Tasty Pasta

Quinoa pasta rotelle
Diced tomatoes
Garlic
Fresh Basil
Pepper

Boil your pasta in a large pot and cook until done. In a medium pan add a little olive oil on medium heat. Saute diced tomatoes, garlic, and some pepper. Stir in fresh basil when sauce is almost done. Add your sauce to your pasta and sprinkle some nutritional yeast on top. Yum!

Fried Rice!

I made some yummy fried rice over the weekend and I just had to share it with you. It's super easy to make and I used whatever veggies that I had in the fridge/freezer. Check it out:

Fried Rice
Brown Rice
Frozen Peas
Daikon
Green Onions
Broccoli
Rice Vinegar
Shoyu (Organic Soy Sauce)
A little Agave

Cook your rice in a large pot or rice maker. Take your rice and transfer it to a hot pan with a little olive oil. Add your veggies, rice vinegar, shoyu, and agave. Stir up all your ingredients until the veggies are done and it tastes exactly how you want it. Serve up the goodness! I added some kimchi to mine cuz I love spicyness.  Yum!



Raw Bar!

Hey guys! Yay! I finally got my videos working again, so here is one I did a few weeks ago about this raw bar from Two Mom's in the Raw. I got this raw bar in my goodie bag from my fantastic urban food crawl adventure. It was delightfully sweet and crunchy. I look forward to trying more of their tasty products.

What have I been eatin???

Hello Peeps!

    One of my readers asked if I would list some of the meals I eat throughout the week. So, I took a few days to try and track what I've been eating (it's not as easy as I thought it would be lol). But, I have to admit that keeping  a record of what you're eating makes you more aware of some of the bad and good choices you make when it comes to food. I've been trying to cut back on gluten because I've noticed that when I have too much it upsets my stomach. I think I'm also having the same effect from soy, which sucks because I love some of the meat replacements that are out there. But, I guess as long as I don't overload on them like I used to, I should be fine. Anyway, here are three days of eating that I picked out for ya:


Day 1: Cereal
           Green Juice - romaine lettuce, celery, kale, broccoli, and a few cherries
           Quinoa with veggies
           Cookie
           Quinoa Pasta - diced tomatoes, squash, fresh basil, garlic, pepper, and some nutritional yeast on top.





Day 2: Oatmeal
           Grilled Cheese w/gluten free bread & chips
           Smoothie
           Spare rib tips from Vegetarian Plus with fried brown rice
           Chocolate Peanut butter pie






Day 3: Cereal
           Protein Smoothie
           Leftover pasta
           Sunflower seeds (the frito lay kind...Now, I would not recommend these cuz they have so much sodium, but I'm highly addicted to them, so I digress.lol Try some organic ones without all the salt).
