Nachos for dinner!

Last night I made these hot mess nachos that were deliciously fattening yet a lot healthier than non-vegan nachos. I love being a vegan! :-)

Nachos: organic tortilla chips, black beans, daiya cheese, tomatoes, onions, match meat ground beef, avocado, sour cream, and salsa. OMG!
I melted the cheese by sprinkling some on top of the chips and placing them in the oven on broil until the cheese was nice and gooey.

Vegan Crab Cakes!

I used to waitress at a restaurant in New York that served the yummiest crab cakes ever...and some of the best sauce to go with it. I haven't had crab cakes in a while and when I decided to try the Match Meat crab cakes I was a little skeptical. So far, I haven't had any crazy experiences with meat substitutes...but vegan crab meat???? I wasn't sure this was going to be the greatest adventure my stomach was going to experience. BUT! I was quite pleasantly surprised with this crab cake-liciousness! Match Meat is on point with crab meat! These crab cakes were crunchy on the outside and flavorful and tender on the inside. You have to try these and marvel in the wonders of vegan crab.

Vegan BBQ! Yum!

So, I attended the vegan barbecue event hosted by Figueroa Produce and Plant Food for People. Figueroa Produce had a menu full of Match Meat goodness and Plant Food for People served up their Jackfruit (carnita) tacos. Yum is all I have to say. I've been dying to try these infamous jackfruit tacos and find out if they taste as good as they look. Well, they do! I tried all five different toppings and each one was as delicious as the others. I was so stuffed half way through eating these things and was very grateful to have my husband's help finishing them off. We made our way over to Figueroa Produce's side and my husband ordered a Hak Burger which includes daiya cheese and bacon. I took a bite and nearly drooled on myself. They also had samples of their very scrumptious Match Meat stuffed chicken. Drinks were served outside in a cooler or inside the store. There was limited seating but other people seemed find standing. It was very hot outside so we didn't stay long, but overall, the event was very nice and I look forward to their next one.

Vegan BBQ on Saturday!

I'm so excited for the Figueroa Produce's barbecue on Saturday. They will be serving Match Meat burgers, chicken, and crabcakes...mmm...Match Meat crabcakes are off the hook! (Stay tuned for my video of me making some crabcakes).  Plant Food for People will be there handing out their carnita (jackfruit) tacos and I'm super excited to try them. Dinner and Dessert!

Leftovers are wonderful! No chopping or cooking involved....just heat it up and eat. Last night I had some lovely leftover veggies and quinoa. I also took some Match Meat chicken and formed it into little nuggets. I fried them and drenched them in some hot buffalo sauce. 



For dessert I had some non-dairy cookie dough ice cream! I was definitely afraid to give up ice cream in this vegan journey but they have so many options to keep your palate entertained. 
This cookie dough ice cream was definitely scrumptious! Okay, so Purely Decadent also has a brand made with coconut milk and at first I didn't want to try it because I hate coconut (yes, I know I'm probably like the only person who does). But, they were the only brand that had my favorite ice cream, which is vanilla swiss almond. Unfortunately, I just couldn't get past the coconut flavor and I was sadly disappointed. :-(  However, I do enjoy cookie dough as well and I was happy to find this one (without any coconut milk!). :-)

Match Meat Dinner

Thursday night I made a pot of quinoa and roasted some veggies. I took some of the vegetables I picked up from the CSA on Tuesday, rubbed them with some extra virgin olive oil, sprinkled with a little salt and pepper, and topped them off with some lemon zest and juice. They were heavenly!




Last night I paired the leftover quinoa and veggies with some Match Meat Chicken. I tried the Match Meat Italian Sausage and it was delicious. I couldn't even tell the difference! If you're not vegan but trying to cut back on meat, I would definitely recommend trying Match Meat or Gardein products. This was my first time trying the Match Meat Chicken, so I was a little nervous. But, I must admit it was very good. I breaded mine with panko bread crumbs and fried it in the pan with a little vegetable oil. I added some lemon juice, parsley, and of course...Hot Sauce. Yum!
